Ingredients:
  • 1 cup long-grain white rice
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 tbsp vegetable oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 2 cups vegetable broth
  • 1 tbsp chopped fresh parsley
  • Salt and pepper, to taste

 INSTRUCTIONS




1) In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.

2) Add the minced garlic, ground cumin, paprika, and dried thyme to the skillet. Cook for an additional 1-2 minutes, until fragrant.

3) Stir in the long-grain white rice and cook for 2-3 minutes, stirring frequently, until the rice is lightly toasted.

4) Add the vegetable broth to the skillet and bring to a boil.

5) Once boiling, reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.

6) Stir in the kidney beans and chopped fresh parsley. Season with salt and pepper to taste.

7) Remove from heat and let sit, covered, for 5 minutes.

8) Fluff the rice and beans with a fork before serving.
