For the Boiled Fish:
  • 2 lbs fish fillets (snapper, grouper, or other firm white fish)
  • 4 cups water
  • 1 cup onion, chopped
  • 1 cup green bell pepper, chopped
  • 1 cup celery, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp paprika
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1/4 tsp salt
  • 1 lime, cut into wedges
For the Grits:
  • 1 cup stone-ground grits
  • 4 cups water
  • 1 tsp salt
  • 1/4 cup butter
  • 1/2 cup cheddar cheese, shredded

INSTRUCTIONS                                                                                                                                                     

For the Boiled Fish:

1) In a large pot, combine the water, chopped onion, chopped green bell pepper, chopped celery, minced garlic, thyme, paprika, black pepper, cayenne pepper, and salt.

2) Bring the mixture to a boil and let it simmer for about 10-15 minutes to allow the flavors to meld.

3) Add the fish fillets to the pot and simmer for an additional 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.

4) Serve the boiled fish hot with lime wedges.

For the Grits:

1) In a separate pot, bring the water to a boil. Add the salt.

2) Gradually stir in the stone-ground grits and reduce the heat to low.

3) Cover the pot and let the grits simmer for about 20-25 minutes, stirring occasionally, until they are tender and creamy.

4) Stir in the butter and shredded cheddar cheese until well combined.

5) Serve the creamy grits alongside the boiled fish.
