For the Bammy:
- 2 cups cassava flour
- 1/2 tsp salt
- 1/2 cup water
- 1/4 cup coconut milk
- 1 tbsp butter, melted
- 1 tbsp sugar
- 1/2 tsp vanilla extract
INSTRUCTIONS
1) In a bowl, combine the cassava flour and salt.
2) In a separate bowl, mix together the water, coconut milk, melted butter, sugar, and vanilla extract.
3) Gradually add the wet ingredients to the dry ingredients, stirring to form a smooth batter. The consistency should be similar to pancake batter.
4) Heat a non-stick skillet or griddle over medium heat.
5) Grease the skillet with a small amount of oil or butter.
6) Pour a ladleful of the batter onto the skillet to form a round flatbread, about 6 inches in diameter.
