INGREDIENTS

4 Persons

For the Banana Pancakes:
  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 large egg
  • 1 cup buttermilk
  • 2 tbsp unsalted butter, melted
  • 1 tsp vanilla extract

INSTRUCTIONS

1) In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

2) In another bowl, mash the ripe bananas until smooth.

3) Add the egg, buttermilk, melted butter, and vanilla extract to the mashed bananas. Mix well.

4) Gradually pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; the batter can be slightly lumpy.

5) Preheat a griddle or non-stick skillet over medium heat. Lightly grease with butter or cooking spray.

6) Pour about 1/4 cup of batter onto the griddle for each pancake.

7) Cook until bubbles form on the surface and the edges look set. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown and cooked through.

8) Serve the Banana Pancakes warm with your favorite toppings, such as sliced bananas, chopped nuts, or a drizzle of maple syrup.
