  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour

  • 1 large egg
  • 1 cup buttermilk

2) In another bowl, mash the ripe bananas until smooth.

3) Add the egg, buttermilk, melted butter, and vanilla extract to the mashed bananas. Mix well.

4) Gradually pour the wet ingredients into the dry ingredients and gently fold until just combined. Do not overmix; the batter can be slightly lumpy.

5) Preheat a griddle or non-stick skillet over medium heat. Lightly grease with butter or cooking spray.

6) Pour about 1/4 cup of batter onto the griddle for each pancake.
