INGREDIENTS

4 Persons

For the Fish Chowder:
  • 1/4 cup unsalted butter
  • 1 onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 potatoes, peeled and diced
  • 2 cloves garlic, minced
  • 1/2 tsp thyme
  • 1/2 tsp paprika
  • 1/2 tsp allspice
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 4 cups fish or vegetable broth
  • 1 can diced tomatoes
  • 1/2 cup heavy cream
  • 1 lb white fish fillets (snapper, grouper), cut into bite-sized pieces
  • 1/4 cup fresh parsley, chopped
  • 1 lime, cut into wedges

INSTRUCTIONS

1) In a large pot, melt the butter over medium heat. Add the chopped onion, carrots, celery, and potatoes. Sauté until the vegetables are softened.

2) Add the minced garlic, thyme, paprika, allspice, black pepper, and cayenne pepper. Cook for a few minutes until fragrant.

3) Pour in the fish or vegetable broth and add the diced tomatoes. Bring the mixture to a simmer.

4) Let the chowder simmer for about 15-20 minutes, allowing the flavors to meld and the vegetables to become tender.

5) Stir in the heavy cream and add the bite-sized fish pieces. Cook for an additional 5-7 minutes, or until the fish is cooked through and flakes easily.

6) Season with salt and adjust the spices if needed.

7) Ladle the Fish Chowder into bowls, garnish with chopped parsley, and serve with lime wedges.
