- 1 cup dried pigeon peas or black-eyed peas
- 2 cups long-grain white rice
- 1/4 cup vegetable oil
- 1 medium onion, chopped

- 2 cloves garlic, minced
- 1 tsp thyme
- 1/2 tsp paprika

- 4 cups chicken or vegetable broth

INSTRUCTIONS
1) In a large bowl, soak the dried peas in water overnight. Drain and rinse the peas before using.
2) In a pot, heat the vegetable oil over medium heat. Add the chopped onion, bell pepper, and celery. Sauté until the vegetables are softened.
