INGREDIENTS
4 Persons
For the Crack Conch:
- 1 lb conch meat, cleaned and tenderized
- 1 cup all-purpose flour
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup buttermilk
- 1 cup vegetable oil, for frying
- 1 lime, cut into wedges
INSTRUCTIONS
1) In a bowl, combine the all-purpose flour, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
2) Pour the buttermilk into a separate bowl.
3) Dip each piece of tenderized conch meat into the buttermilk, allowing any excess to drip off.
4) Dredge the conch in the flour mixture, pressing gently to adhere the coating. Shake off any excess flour.
5) In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
6) Carefully add the coated conch pieces to the hot oil, working in batches if necessary. Fry for about 2-3 minutes on each side, or until the coating is golden brown and crispy.
7) Remove the fried conch from the oil and place it on a paper towel-lined plate to drain excess oil.
8) Serve the Crack Conch hot with lime wedges and your favorite dipping sauce.
