  • 1/2 cup long-grain white rice
  • 2 cups whole milk
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 tbsp unsalted butter
  • 1 tbsp raisins (optional)

 INSTRUCTIONS




1) In a medium saucepan, combine the long-grain white rice, whole milk, granulated sugar, vanilla extract, ground cinnamon, ground nutmeg, and salt.

2) Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer, stirring occasionally, for about 25-30 minutes or until the rice is tender and the mixture has thickened to a pudding-like consistency.

3) Stir in the unsalted butter until melted and fully incorporated.

4) If using raisins, stir them into the rice pudding just before serving.

5) Serve the rice pudding warm or chilled, garnished with a sprinkle of cinnamon on top if desired.
