For the Guava Duff:
  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup guava jam or preserves
  • 1/2 cup milk
For the Butter Sauce:
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup water

INSTRUCTIONS                                                                                                                                                    

1) In a large bowl, whisk together the flour, granulated sugar, and salt.

2) Add the cubed butter to the dry ingredients. Use your fingers or a pastry cutter to work the butter into the flour until the mixture resembles coarse crumbs.

3) Gradually add the milk to the flour mixture, mixing with a fork or your hands, until the dough comes together. Be careful not to overmix.

4) Roll out the dough on a floured surface into a rectangular shape, about 1/4 inch thick.

5) Spread the guava jam evenly over the dough.

6) Roll up the dough tightly, jelly-roll style, and seal the edges.

7) Place the guava-filled roll onto a piece of greased parchment paper and wrap it tightly in the parchment paper.

8) Bring a large pot of water to a boil. Carefully add the wrapped roll to the boiling water and cook for about 1 to 1.5 hours, ensuring it's fully submerged and turning occasionally.

9) While the duff is cooking, prepare the butter sauce. In a saucepan, melt the butter over medium heat. Add the granulated sugar and water, stirring until the sugar is dissolved. Let the sauce simmer for a few minutes until it thickens slightly. Remove from heat.

10) Once the guava duff is cooked, remove it from the water, unwrap, and let it cool slightly before slicing.

11) Serve slices of the guava duff warm, drizzled with the butter sauce.
