- 1 cup long-grain white rice
- 2 cinnamon sticks
- 4 cups water
- 1/4 tsp salt
- 1 can (14 oz) sweetened condensed milk
- 1 tsp vanilla extract
- 1/2 cup raisins (optional)
- Ground cinnamon, for garnish
INSTRUCTIONS
1) In a large saucepan, combine the rice, cinnamon sticks, water, and salt. Bring to a boil over high heat.
2) Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed.
3) Remove the cinnamon sticks and discard.
4) Stir in the sweetened condensed milk and vanilla extract. Continue to cook over low heat, stirring occasionally, until the mixture thickens and becomes creamy, about 10-15 minutes.
5) If using raisins, stir them into the rice pudding during the last few minutes of cooking.
