  • 2 cups white rice
  • 1/2 cup frozen or canned sweet corn kernels
  • 1/2 cup green bell pepper, finely chopped
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 4 cups chicken or vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1 bay leaf
  • 1/4 cup fresh cilantro or parsley, chopped (for garnish)
  • 1 lime, cut into wedges
  • Salt and pepper, to taste

INSTRUCTIONS                                                                                                                                                     

1) Rinse the white rice under cold water until the water runs clear. Drain the rice well.

2) In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, green bell pepper, and minced garlic. Sauté until the vegetables are softened.

3) Add the rinsed rice to the pot and stir to coat the rice with the oil and vegetables.

4) Stir in the cumin, paprika, and turmeric, and cook for a minute to toast the spices.

5) Add the sweet corn kernels and bay leaf to the pot.

6) Pour in the chicken or vegetable broth and season with salt and pepper. Stir well.
