For the Conch Fritters:
  • 2 cups conch meat, finely chopped
  • 1 cup all-purpose flour
  • 1/2 cup bell pepper, finely chopped
  • 1/2 cup onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 2 cloves garlic, minced
  • 1 egg, beaten
  • 1/4 cup milk
  • 1 teaspoon baking powder
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon salt
  • Oil for frying

INSTRUCTIONS                                                                                                                                                     

1) In a bowl, combine the finely chopped conch meat, bell pepper, onion, celery, and minced garlic.

2) In a separate bowl, mix the beaten egg and milk.

3) In another bowl, whisk together the all-purpose flour, baking powder, cayenne pepper, and salt.

4) Gradually add the wet ingredients to the dry ingredients, stirring until well combined.

5) Fold in the conch mixture until evenly distributed.

6) In a deep skillet, heat oil to 350°F (175°C).

7) Using a spoon, drop spoonfuls of the conch batter into the hot oil. Fry until golden brown and crispy, about 2-3 minutes per side.

8) Remove the fritters from the oil and place them on a plate lined with paper towels to drain excess oil.
