For the Curried Goat:
  • 2 lbs goat meat, bone-in and cut into chunks
  • 2 tbsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/4 tsp cardamom
  • 1/4 tsp cayenne pepper
  • 2 tbsp vegetable oil
  • 2 onions, finely chopped
  • 3 cloves garlic, minced
  • 1 Scotch bonnet pepper, seeds removed and minced
  • 1 tbsp ginger, minced
  • 2 tbsp tomato paste
  • 2 cups beef or goat broth
  • 2 potatoes, peeled and diced
  • 1 carrot, peeled and diced
  • 1 bell pepper, diced
  • Salt, to taste
  • Pepper, to taste

INSTRUCTIONS                                                                                                                                                     

1) In a bowl, combine the curry powder, cumin, coriander, turmeric, cinnamon, nutmeg, cloves, cardamom, and cayenne pepper to create the spice blend.

2) Rub the spice blend over the goat meat chunks, ensuring they are well coated. Let marinate for at least 1 hour, or preferably overnight in the refrigerator.

3) In a large pot, heat the vegetable oil over medium-high heat. Add the chopped onions and cook until translucent.

4) Add the minced garlic, minced Scotch bonnet pepper, and minced ginger to the pot. Cook for another 2 minutes.

5) Stir in the tomato paste and cook for an additional 2 minutes.

6) Add the marinated goat meat to the pot and brown on all sides.

7) Pour in the beef or goat broth and bring to a simmer.

8) Cover the pot and let the meat simmer for about 1.5 to 2 hours, or until the meat is tender.

9) Add the diced potatoes, diced carrot, and diced bell pepper to the pot. Continue to simmer until the vegetables are cooked through.

10) Season the Curried Goat with salt and pepper to taste.
