For the Johnny Cake:
  • 2 cups all-purpose flour
  • 1/2 cup cornmeal
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, melted
  • 3/4 cup milk

 INSTRUCTIONS




1) Preheat the oven to 375°F (190°C) and grease a baking sheet.

2) In a large mixing bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, and salt.

3) Add the melted butter and milk to the dry ingredients and mix until a dough forms.

4) Turn the dough out onto a floured surface and knead gently until smooth.

5) Roll out the dough to about 1/2 inch thickness and cut into rounds using a biscuit cutter or glass.

6) Place the rounds onto the prepared baking sheet and bake for 15-20 minutes, or until golden brown.

7) Remove from the oven and serve warm.
