- 1 lb beef stew meat, cubed
- 1 lb pork stew meat, cubed
- 1 lb chicken thighs, boneless and skinless
- 6 cups beef broth
- 1 cup water
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tsp thyme, dried
- 1 tsp allspice, ground
- 1 tsp black pepper
- 1/2 tsp nutmeg, ground
- 1 lb spinach, chopped
- 2 cups okra, sliced
- 2 cups butternut squash, diced
- 2 cups coconut milk
- 1 tbsp vegetable oil
INSTRUCTIONS |
1) In a large pot, heat the vegetable oil over medium-high heat. Add the beef, pork, and chicken to the pot and brown on all sides.
2) Add the chopped onion and minced garlic to the pot with the meat. Sauté for a few minutes until the onions are soft.
3) Pour in the beef broth and water, then add the thyme, allspice, black pepper, and nutmeg. Bring the soup to a boil, then reduce the heat and simmer for about 1 hour, until the meat is tender.
4) Stir in the chopped spinach, sliced okra, and diced butternut squash. Simmer for an additional 15-20 minutes, until the vegetables are tender.
5) Finally, stir in the coconut milk and let the soup simmer for another 5 minutes to heat through.
6) Season with salt and additional pepper to taste, if desired.
7) Serve hot, garnished with fresh herbs if desired.
