Ingredients:
  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup milk
  • 1/4 cup dark rum
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup chopped pecans or walnuts (optional)

 INSTRUCTIONS




1) Preheat the oven to 325°F (165°C). Grease and flour a bundt cake pan.

2) In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.

3) Beat in the eggs, one at a time, mixing well after each addition.

4) Stir in the milk, dark rum, and vanilla extract until well combined.

5) In a separate bowl, sift together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

6) If using chopped pecans or walnuts, fold them into the batter.

7) Pour the batter into the prepared bundt cake pan and smooth the top with a spatula.

8) Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the cake comes out clean.

9) Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

10) Once the cake has cooled, prepare the rum glaze by combining 1/2 cup of granulated sugar, 1/4 cup of dark rum, and 1/4 cup of water in a small saucepan. Bring the mixture to a boil over medium heat, then reduce the heat and simmer for 5-7 minutes, stirring constantly, until the glaze has thickened slightly.

11) Brush the warm rum glaze over the top and sides of the cooled cake.

12) Allow the glaze to set before serving the cake.
