  • 2 cups granulated sugar
  • 1 cup shredded coconut
  • 1/2 cup water
  • 1/4 cup butter
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg

 INSTRUCTIONS




1) In a large saucepan, combine the granulated sugar, shredded coconut, water, butter, vanilla extract, ground cinnamon, and ground nutmeg.

2) Cook over medium heat, stirring constantly, until the mixture reaches a soft ball stage (approximately 235°F to 240°F or 113°C to 116°C on a candy thermometer).

3) Remove the saucepan from the heat and let the mixture cool slightly.

4) While the mixture is still warm, pour it onto a greased baking sheet or into a greased cake pan.

5) Let the sugar cake cool and set completely before cutting it into squares or wedges.
