Ingredients:
  • 8 cups bread cubes
  • 1 can (20 oz) crushed pineapple, drained
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 4 large eggs, beaten
  • 2 cups milk
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon, ground
  • 1/4 tsp nutmeg, ground
  • 1/4 cup raisins (optional)

 INSTRUCTIONS




1) Preheat the oven to 350°F (175°C) and grease a baking dish.

2) In a large mixing bowl, combine the bread cubes and crushed pineapple.

3) In a separate bowl, whisk together the brown sugar, melted butter, beaten eggs, milk, vanilla extract, cinnamon, and nutmeg.

4) Pour the egg mixture over the bread and pineapple mixture, and gently toss until well combined.

5) If using, fold in the raisins.

6) Transfer the mixture to the prepared baking dish and spread it out evenly.

7) Bake in the preheated oven for 45-50 minutes, or until the pudding is set and the top is golden brown.

8) Remove from the oven and let it cool slightly before serving.
