  • 2 lbs beef (flank steak or skirt steak), shredded
  • 1/4 cup olive oil
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1 bay leaf
  • 1/2 cup dry white wine
  • 1/2 cup beef broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1/4 cup tomato sauce
  • 1 tsp salt (or to taste)
  • 1/4 cup pimiento-stuffed olives, sliced
  • 2 tbsp capers
  • 1/4 cup fresh cilantro or parsley, chopped

INSTRUCTIONS                                                                                                                                                     

1) In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.

2) Add the chopped green and red bell peppers and sauté for a few minutes until they begin to soften.

3) Stir in the minced garlic, cumin, oregano, paprika, black pepper, cayenne pepper (if using), and bay leaf. Cook for about 2 minutes until the spices are fragrant.

4) Add the shredded beef to the pot and mix well with the vegetables and spices.

5) Pour in the white wine and beef broth. Bring to a simmer and let it cook for about 5 minutes.

6) Add the diced tomatoes, tomato sauce, and salt. Stir to combine.

7) Cover the pot and let the mixture simmer over low heat for about 1 to 1.5 hours, stirring occasionally.

8) Once the flavors have melded and the beef is tender, add the sliced olives, capers, and chopped cilantro or parsley. Mix well.

9) Continue to simmer for an additional 10 minutes to allow the flavors to come together.
