INSTRUCTIONS |
1) In a large saucepan, combine the diced papaya, granulated sugar, lime juice, and lime zest.
2) Bring the mixture to a boil over medium-high heat, stirring occasionally.
3) Once boiling, reduce the heat to low and let the mixture simmer for about 30-40 minutes, or until thickened, stirring occasionally to prevent sticking.
4) Remove the saucepan from heat and let the jam cool slightly.
5) Transfer the jam to sterilized jars and seal tightly.
6) Allow the jars to cool completely before storing them in the refrigerator.
