- 1 cup black beans, dried
- 2 cups white rice
- 1/4 cup olive oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp dried oregano
- 1/2 tsp ground black pepper
- 1/4 tsp ground cayenne pepper
- 1 bay leaf
- 4 cups water
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh parsley, chopped
INSTRUCTIONS
1) Rinse the black beans and soak them in water overnight. Drain and rinse before using.
2) In a large pot, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and minced garlic. Sauté until the vegetables are softened.
3) Stir in the soaked black beans, ground cumin, dried oregano, ground black pepper, ground cayenne pepper, and bay leaf. Cook for a few minutes to allow the flavors to meld.
4) Add the white rice to the pot and stir to combine with the bean mixture.
5) Pour in the water and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
6) Remove the bay leaf and discard.
7) Gently fluff the Moros y Cristianos with a fork, then stir in the chopped cilantro and parsley.
