For the Guava Duff:
  • 2 cups all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup milk
  • 1 cup guava jam or guava paste
For the Butter Rum Sauce:
  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 cup heavy cream
  • 2 tbsp rum

INSTRUCTIONS                                                                                                                                                     

1) In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.

2) Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

3) Gradually add the milk and mix until a soft dough forms. Be careful not to overmix.

4) On a floured surface, roll out the dough into a rectangle about 1/4 inch thick.

5) Spread the guava jam or guava paste evenly over the surface of the dough.

6) Carefully roll up the dough, jelly-roll style, into a log. Seal the edges by pinching the dough together.

7) Place the guava-filled dough log onto a piece of parchment paper and roll it up tightly in the parchment, twisting the ends to secure.

8) Place the wrapped dough log in a steamer and steam for about 1 to 1.5 hours, or until the duff is cooked through and firm to the touch.

9) While the duff is steaming, prepare the butter rum sauce. In a saucepan, melt the butter over medium heat.

10) Stir in the granulated sugar, heavy cream, and rum. Cook, stirring, until the sugar is dissolved and the sauce is smooth and heated through.

11) Remove the duff from the steamer, unwrap it from the parchment paper, and slice it into rounds.
